Chia Pudding with Maria Menounos

Rally Health Ambassador, Maria Menounos joined us for a trip to Chicago’s Beatrix restaurant to learn some healthy new recipes. Maria loved this delicious recipe for breakfast chia pudding and we think you will too! Enjoy this Coconut Chia Pudding., top with fresh banana and peach compote to make a delicious Coconut Cereal Bowl or experiment with your own toppings.


Yield: 4 servings
Ingredients:
3 cups coconut milk
¼ cup chia seeds
3 tablespoon light agave syrup
1 pinch salt
2 teaspoon vanilla extract or 1 tablespoon vanilla bean paste
⅓ to ½ fresh bannana per bowl
2 tablespoons peach compote per bowl
¼ cup cinnamon rice puffs per bowl
1 to 2 tablespoons toasted coconut per bowl
Fresh mint sprig to garnish each bowl

Coconut Chia Seed Pudding Instructions:
1. Combine all ingredients and mix thoroughly
2. Stir every 2 hours to ensure even blooming for 6-8 hours

Coconut Cereal Bowl Instructions:
1. Ladle about ¾ cup Coconut Chia Seed Pudding into bowl
2. Carefully add the sliced bananas on one quadrant.
3. Carefully spoon the peach compote in another quadrant.
4. Add the cinnamon puffed rice in another quadrant
5. Sprinkle top center with coconut and add mint sprig.
6. Enjoy!
